Lemon Oatmeal Cookies

I've started making cookies every Sunday evening for Dad's lunches. I found that I very much enjoy it. I want to make it a weekly tradition. But once we start having evening services I probably won't =( But this week I made these delicious lemon cookies. And I decided that I am also going to start sharing my recipes. This was a spur of the moment thing so I have no pictures. Sorry. But here's the recipe!

It's from the cookbook that my lovely sister got me for Christmas. Taste of Home Church Supper Desserts.

Lemon Oatmeal Cookies.

Yields 4 1/2 dozen

1 cup butter
1 package (3 oz) cream cheese, softened
1-1/4 cups sugar
1 egg yolk
2 tsp grated lemon peel
1 tsp lemon extract (I used lemon juice and vanilla extract)
1-1/3 cups all-purpose flour
1-1/3 cups quick-cooking oats
1/2 tsp salt (I used 1 tsp because I like saltier sweets)
Topping:
1 egg
1 egg white
Sugar
1/2 cup sliced almonds
  1. In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in the egg yolk, lemon peel and extract (I added the juice here too). Combine flour, oats and salt; gradually add to creamed mixture and mix well.
  2. Drop by heaping teaspoonfuls 2 in. apart onto greased baking sheets. Beat egg and egg white; brush over dough. Sprinkle with sugar; top with almonds.
  3. Bake at 350 for 10-12 minutes or until edges are light browned. Remove to wire racks.

These are truly delicious! I really don't think they'll last the week.
